Th!nkgreen’s almond tuna balls

  • 1 can of th!nkgreen’s tuna
  • 1 strained yoghurt
  • 1 cup of mayonnaise
  • 1-2 tbsp of th!nkgreen organic olive oil
  • the juice of half a lemon
  • 2 tbsp of chopped parsley
  • 1 cup of flaked almonds (net)
  • salt and pepper

Take the tuna from the can and let it drain slightly on paper towels.  Break the tuna into chunks with a fork and mix it with the yogurt, mayonnaise, olive oil, lemon juice, and parsley.  Taste it and add salt as desired. Fill with freshly grounded pepper and a little bit with th!nkgreen’s extra virgin organic olive oil.

Put the mixture in the refrigerator (for about half an hour).  Knead it into balls (1 tablespoon of the mixture for each one).  Lay the filet almond in a wide and shallow dish and roll the balls in order to be covered by this.  You can serve the balls with Chinese sweet and sour sauce.

Instead of almond, you can put sesame or fresh grated mint as an alternative in color and taste. Try different variations. It looks and tastes awesome.
